What interesting potato recipes can I make with a load of spuds that I need to use up? Ideally stuff I can freeze.

Thanks.

You can prep as if you were going to roast them, peel and par boil then freeze.

Mash freezes well.

Am waiting with interest for some more exciting ideas to come along!

Potatoes keep very well in a cool dark place.

Why do you need to cook them?

Soup - make up a batch of leek and potato and freeze.

give them to your dc's to make potato prints

Par boil and grate them, mix with melted butter (lots of) and shape into flat round cakes and yay, its rosti! Brilliantly compact for freezing. Can do any shape you like but dont go down the muffin case route, they look too much like roast taties - bit disconcerting
