I work 3 days a week, and ds1 has swimming another night, which means that 4 nights a week we need to have tea cooked and on the table ideally within 20 minutes of walking through the door (to avoid overtired, not wanting to eat children).

ATM I use my slow cooker to batch cook and freeze, so we have casseroles, bolognese, chilli and curry a lot, but I'd love some new ideas for quick to cook teas. Preparation in advance (chopping etc) is no problem to speed things along at the critical time!

My ds's are 4 and 2 and will give most things a try.

Thanks in advance for any ideas you can pass on.

A variation of the pasta/pesto dish is to make a sauce from creme fraiche, red pesto, tin of butter beans and dollop of Boursin. Just throw it all in together and heat whilst the pasta cooks.

Serve with grated parmesan and toasted pine nuts sprinkled on top.

carbonara

cook some pasta
dry fryn some bacon bites in a non stick pan

mix either sour cream / creme fraiche or even natural yogurt with an egg, a squeeze of lemon juice salt and pepper and stir over the hot pasta and mix in bacon bits!!!

God yes Seeker. My favourite stuff something relatively healthy into them in as little time as possible meal is:

  • stick kettle on
  • pour hot water over rice noodles
  • meanwhile zap some frozen soy beans in the microwave
  • drain noodles, plonk beans on top of them, add soy, honey, chilli flakes
  • feed children whilst being bloomin' glad I don't have to eat such shite myself (can't stand rice noodles).

ditto pizza but we use tortillas as a base. Put oven on full and add any topping you like....

Good idea about using the oven timer - that had never occurred to me.

Thanks bloss
