can you freeze chocolate truffles?

or how long would they keep in the fridge in an airtight container?

I posted a while ago about a friends wedding - how she wanted me to cater it, which is fine, but pudding/dessert is usually what i do. What can I bake and freeze so that it will still be tasty on the day?

80-100 people. Was originally thinking about pavlova, but now thinking about fruit terrine/champagne jelly or small petit four type chocolates.

help me make life easier please.

Truffles freeze well.

I'm not much help about other ideas though, sorry!

To be honest no. The truffles I did which froze well were these melt in the middle truffles which sounds great and they were tasty but they were SUCH a faff that I wouldn't bother doing them again. Also, I don't like dusting them in cocoa powder as it is too bitter so would use something else next time though not sure what, coconut flakes, hot chocolate powder (less bitter perhaps? coffee maybe, there are loads of possibilities)

I might be tempted to do a massive trifle/chocolate cake/cheesecake or something, seems the easier option to me! Good luck!
