Right, I've got pork mince and I'm not afraid...

to try and create something edible for tomorrows dinner, using only this and what bits and bobs are festering in my fridge and cupboards. Think basics, like chopped toms, dried herbs, pasta. Any ideas?

I love ragu made with pork mince. I always use it in preference to beef. Sorry, not v exciting.

meatballs - squidge up your mince with some breadcrumbs (one slice stale - not mouldy - bread. Crumb using blender or leave out to dry a bit and rub betwixt fingers) and some herbs - very small amount dried thyme? oregano? parsley? - and maybe some finely chopped onion and an egg. Squish together, make balls, fry off/brown - no oil needed - chuck into tomto concoction - a bayleaf comes in handy. Cook gentle simmer for at least an hour or two - or bung in oven with a lid/foil and slow-cook at around 120/140 oC. Do sketty, grate some cheese on top. Can be frozen as well once cooked, or make balls if quiet tonight, pile up in a bowl, cling-film, leave in fridge o/n to cook tomorrow.
Done.

Nigel Slater's spicy pork meatballs , you need pork mince, bacon, garlic, chilli, lemongrass or lime leaves,onion and coriander. My DC adore them. If you have a food processor they are the work of minutes.
