Remind me re. proportions for vinaigrette would you?

I have extra virgin olive oil.

Light olive oil.

Red wine vinegar.

Dijon mustard.

Salt and pepper.

I don't like dressings made with extra v olive oil only cos I think they taste a bit too green.

So, what would you do with that lot to make a nice not too mustardy dressing?

5 or 6 parts oil to vinegar, half and half light and EV suits my taste. Teaspoon of mustard, salt and pepper (and perhaps a pinch of sugar depending on the vinegar).

Thank you BH. I did 6 parts oil to vinegar for a completely green salad. I seem to remember reading somewhere that the proportion of oil to vinegar should be as high as you dare. The dc ate it (hallelujah) and I'll be having some later. I don't know why, but we have relied on Pizza Express dressing for far too long.

Hm, we always did 3 parts oil to vinegar. Then add as much mustard as you like.

I never like to use olive oil though, toooooo strong for me

As a qualified chef, I can confirm that the ratios are 3:1 (oil to vinegar) :0) enjoy ladies.

My special dressing:

4 tbsp oil
4 tbsp orange juice
2 tbsp vinegar
1/2 tsp mustard
salt and pepper

Easy and yum...
