tried and tested vegan cake recipies please

I was asked last night if I could make a vegan cake. Was a bit stumped, am developing gluten and wheat free but am embarrassed to say hadn't thought of vegan.

Does anyone have recipies they have used sucessfullly please? I need to be able to make it into cupcakes.

For a great vegan chocolate cake try "here theppk.com/blog/page/7/" and scroll down until you get to the chocolate cake recipe. These do work as cupcakes and I have also made almond cakes with the recipe omitting the cocoa and adding ground almonds and doubling the almond extract. Not gluten or wheat free though. I also have a recipe for lemon veagn cupcakes which are very nice if you want that

The only cake recipe I really got on well with from vegan family was the banana muffins which actually make great little mini muffins.

Lemon cupcake recipe is take from Vegan with a Vengeance by Isa Chandra Moskowitz (author of the blog with the choc cake above)

165g plain flour
half tsp baking powder
three quarter tsp bicarbonate of soda
quarter tsp salt
3 tbsp rapeseed oil
170g sugar
250 ml rice milk (although I usually use fresh soya milk)
1 tsp vanilla extract
3 tbsp lemon juice
1 tbsp lemon zest

Makes 12. Preheat oven to 180 C
Sift flour, powders & salt
Seperately combine oil, sugar, milk, vanilla, lemon zest & juice.
Pour dry ingredients into wet and mix until smooth.
Fill each case 3/4 full and bake for 17 - 20 minutes. Ice when cool.

Be warned, I have found that the consistency of the mixture for vegan cakes is really runny and very different from your egg based mixes - the first time I made these I never thought they would work but they did!

This same author has a very interesting little book called "vegan cupcakes take over the world" which is well worth investing in if you are thinking of upping your vegan cupcake range. She has recipes for gluten free vegan cupcakes in there too but I have not tried these.

Right, this is the recipe that you want - I cant believe that it is Vegan.

My kids are so impressed when I bake it (youngest is allergic to dairy, egg and nuts). I use sunflower oil not corn oil.

This recipe also works with a very ripe banana instead of the egg and vegan marge or oil instead of butter. Makes a measly number though so I double up.

What I do which seems reasonabley successful, is to veganize recipes.

So soy/almond milk instead of milk
Ogran egg replacer instead of eggs
Pure margarine instead of butter

Most other stuff can stay the same.

I really would not use margarine instead of butter. Margarine is usually vegetable oil turned into something hard and that is bad news healthwise. You are talking chemically removed and altered substances.
