Preferably not with beans/chickpeas in at as dh and I don't like them. Was going to do a vege curry but she's just told me she's had loads recently, argh! Am rubbish on vege cooking

The last time I cooked for my (vege) neice and her (non-vege) partner I cooked:

Stuffed roasted peppers:

Get large red or orange peppers (sweeter than green), cut off top and take out seeds/pith, fill with mixture of garlic, chopped red onion, mexican rice (used Uncle Bens Micro Rice), kidney beans and cubes of feta cheese. Put top back on and cover in foil. cook on BBQ for 20 mins or in oven, gas 4 for 1/2 hour.

I served with new potatoes and salad.

Neice and partner raved about them and now cook for themselves, and DH and I (non-vege) quiet often have.

What about pasta and salad, with garlic bread? You could do either a baked macaroni cheese or a tomato sauce.

We had a red onion and feta cheese pizza and salad for lunch, very easy and delicious.

How about a puff pastry tart? I did one at the weekend - just mixed up a bit of creme fraiche and grain mustard with some lightly steamed purple sprouting broccoli, put it on a puff pastry sheet and sprinkled cheese over the top. Then you just whack it in the oven for 15 minutes or so. Really easy and quite impressive-looking!

Then just serve with salad and some jersey royals or rosemary-roasted new potatoes.

Caramelised onion quiche or leek quiche or mushroom quiche with baby new potatoes (you could roast them with garlic or boil them and add a bit of butter and mint) and salad.

I love stuffed peppers too, so that is a good suggestion. A fresh tasting tomato sauce goes well with them too, as well as the potatoes and salad.

Asparagus risotto always a goodie.

Puy lentil and roasted vege lasagne with salad.

Ottolenghi's column in the Guardian has very inventive vegetarian recipes. There's a link to a booklet from last week which has some good stuff and his new book (Plenty) is out on Amazon this week at £11.25.

So far I've made the shakshuka, which was delicious, the green pancakes (yummy!) and the very full tart, also really good.
