A big chunk of leftover topside of beef...

What can I do with it? It has been sat in the fridge for a couple of days now and it seems a shame to throw it out. Would it be okay in some sort of slow cooker beef stew concoction? Or would it be horribly dry seeing as it has already been cooked? Any suggestions much appreciated

don't throw it!
beef and horseradish sarnies. yum!
do you have any leftover gravy? you can reheat slices of beef in gravy in the microwave.
or stir fry it ith veggies and noodles.

We almost always have a roast on a Sunday and have a set menu for using it up over the week, along with going in sandwiches! With beef it's as follows!

Monday - cold meat & baked potatoes or couscous
Tues - stir fry
Weds - casserole

For the casserole I just cut it up and put it in with tin of tomatoes and whatever veg is around and cook for about 1 hr - so that would be a good bet.

If you think it's dry another one could be to use it in pasta - more tinned tomatoes and veg.....!

Whatever you do don't throw it out, what a waste!

Oh I won't be throwing it out, don't worry Beef and horseradish sarnies for lunch sound lovely! Then I'll chuck some in the slow cooker and make some sort of beef casserole with whatever I dig out of the veg box. Think I'll set some aside for a stir fry too actually, have some fresh egg noodles that need using up... thanks
