What can I do with 4 bulbs of smoked garlic?

Hello

I've acquired four bulbs of smoked garlic from the bloke who runs the local smokehouse. At £1 for four they seemed an irresistable bargain, or at least would be if I had the faintest idea what to do with them!

Was thinking some sort of creamy, chickeny pasta concoction or just slow raosted and spread on toast (perhaps the day before my forthcoming job interview?)

Any suggestions?

Mmmm.

How about pea & garlic soup:

Roast a whole bulb for about an hour
Peel bulb (gets very sticky but worth it)
Cook peas in stock
Whizz peas + knob of butter + stock in food processor. Season. Eat.

Cut in half, drizzle with olive oil and roast. Yum.

Or cook them slowly and then squeeze out the flesh into a pasta sauce made of reduced cream and white wine and some thyme maybe. Nigel Slater tends to have recipes for that sort of thing.

rOASTED tomato soup?

Roast tomatoes and 1 whole head of garlic with 2 onions, 2 sticks of celery. Drizzle with olive oil and throw in a few sprigs of fresh thyme plus good sprinkle of sea salt and black pepper.

After 1 hr in a hot oven, remove then squeeze garlic and the onions out of their skins. (skins will be papery and insodes will be v soft). Throw the insides back in the roasting dish, add a litre and a half of stock with a dash of white wine if you want.
Leave in oven for another 45 mins ish.

Remove from oven, pass the mixture through a sieve and serve with crusty bread.
You can add a spoonful or two of creme fraiche after sieving and heat through if you prefer a creamier soup.

smash up the garlic, mix with butter and use to baste a chicken.
you can also make garlic olive oil. get a bottle of cheap olive oil and stick a peeled bulb in, leave for a few weeks to absorb the flavour. nice on salads and to pimp up pizza. yummo!
