Harry Eastwood has a book of cake and cupcake recipes that are made from vegetables.

I have this book (harry Eastwood) and have cooked a few of the cakes (incl the choc heartache of the title - made with aubergines!). So far, have been delicious and relatively guilt free so would recommend. She even does L.A (fat free) cupcakes which have not yet tried but will have to give it a go - let us know if you do!
