What are your favourite mushroom recipes please? The girls won't eat them, so dp and I want to gorge ourselves on a day when the girls won't be eating with us! Needs to be veggie.

Also - what is your favourite thing to do with puy lentils please? Again, needs to be veggie.

Cheers.

Puy lentils go very well IMO with chick peas and cumin, so I would do a tomato based cumin dish with the lentils..or a dahl.
Mushrooms go well in either of those dishes.
If you eat eggs, scrambled eggs with lentils and mushrooms is nice.
Sorry can't think of any more recipes, got a 2 yr old hanging off my back

mushrooms and puy lentils.....together....big field mushrooms and lots of chopped ones, onion, toms, stock, soy sauce, herbs - there you go....

janeite · 17/04/2010 17:20

Thank you. The msuhrooms don't have to be with the lentils and actually would be better without, as the girls like lentils but not mushrooms.

Puy lentils with cumin sound nice.

Yum to bith of those links. Have never tasted kale.

Blackduck - yours sounds lovely too, though I'd leave out the tomatoes.

This Potato and mushroom curry is my fav mushroom recipe at the moment. I adore mushrooms too

displayuntilbestbefore · 17/04/2010 17:29

Have you got a BBQ? I don't think that there's much to beat BBQed mushrooms with some warm crusty bread and butter on a warm evening in the garden.

janeite · 17/04/2010 17:41

The curry looks fab - would probably replace the aubergines with green beans or cauliflower: do you think that would work?

Barbecued mushrooms - now why didn't I think of that?!

I make a sort of warm salad with puy lentils:

Soak and cook the lentils, as usual

Whilst they're cooking, finely chop an onion, dice a carrot and chop/press some garlic and saute/sweat in a generous amount of olive oil, if you like chilli, add some too. I sometimes also add some chopped sundried tomatoes (the ones in oil not the dried ones).

Drain the lentils and mix with the onion, carrots, garlic and tomatoes. Season generously and add whatever herbs you like. I sometimes leave it like this or squeeze in the juice of a lemon.

PrettyFeckinVacant · 17/04/2010 18:02

Yes janeite, I use green beans in the curry, not aubergine - although I do like aubergine, just didn't have one at the time.

Mmmm, I like the sound of that salad BIWI

Oh wow - these all sound fantastic. Thank you all.

Mushrooms - simple best IME. Fry in a little olive oil then at end add a knob of butter. Sprinkle over chopped thyme, salt and pepper. Serve on hot toast.Best with the mahoosive ones.Mmmmmmm.

Puy lentils, cooked in veg stock then cooled. Toss w sun blush toms from Sainsbo's and a little of their oil, finely sliced red onion and feta or goats cheese.
