Serving minted lamb parcels (lamb with mint in shortcrust pasty) with new potatoes and carrots. Suddenly occured to me that I might need a sauce of some description. No time to go to shops. Need quick inspiration!!

No, but I'd butter the veg and maybe have some mint sauce on the side. Or if you think you need more emphatic flavours, you could leave out the mint altogether and smear the lamb with olive paste instead. Sounds delicious btw.

Reduced stock as a jus?

I hate myself for saying jus

Or do you have any redcurrant jelly to serve on the side?

Any fresh mint? You could make a mint butter and serve that in pats for potatoes and then no need for sauce perhaps?

Ketchup?

Brown the lamb before putting it in the parcels then deglaze the pan with lamb stock, add some redcurrant jelly and reduce.
