I really want to start eating more beans (not baked beans). I have a few recipes but not sure what else to do with them. I need new ideas on what to do with them.

Mainly eat chickpeas, butter, canellini, kidney. I dont ever mix them all up as that would be too many cans open and its just for me.

Thanks

I do a borlotti bean and sage thing - will look for a version in the ether....

I've got a good bean and pesto bake recipe, will have a look later. Also a great chickpea curry, if you like that sort of thing

Ok, can't find it quickly, but essentially, soak your beans overnight, then next day cover with fresh water, a slug of olive oil, a couple of cloves of garlic, and a handful of sage leaves. Bring to boil then simmer till soft. Season.

Also do this dal recipe a lot - it's lentils but still lovely. I use whole green/brown lentils for it.

Also mix cooked beans with a chopped tomato, spring onion and lemony vinaigrette for a lovely bean salad.

And chilli with veg etc

Sausage and cannellini bean stew - this serves 2

Brown 4 sausages in a casserole then remove and drain off the fat.
Finely chop and saute an onion and clove of garlic.
Add a tin of chopped tomatoes, splash of balsamic and any herbs you have - thyme is especially good.
Add a drained tin of canellini beans, stir, then sit the sausages on top.
Cover and simmer for 45mins or so.
Serve with crusty bread and green beans or broccoli.

I also love 3 bean chilli. I use this chilli recipe but instead of beef I use a tin of black beans and a tin of black eyed peas. It's really good served with baked sweet potato wedges, a dollop of sour cream and some grated cheese.

I absolutely love beans and lentils but don't eat them as often as I'd like as DP apparently feels faint if he doesn't have meat for his evening meal .

Thank you elles - can you share any other lentil type recipe. I used red lentils in soups but i am getting a bit bored of it to be honest and want to try other pulses.

Sausage recipe looks good.

this lentil recipe is lovely too. I've cooked the lentils by themselves as a side for salmon and pork belly.

I use green lentils in bolognese instead of mince, or in lasagne.
