WANTED! Toddler, Baby & (lazy) Mum-friendly lunches?

Any ideas? I'm usually pretty tired in the day so often we don't even end up having a 'proper' lunch

when we do, it's stuff like:
sandwiches/wraps with cold stuff
'salad' i.e. whatever random little bits I can dig out of the fridge
pizza bases with healthy topping
fish fingers, beans or similar crap from freezer
jacket spud with cheese, beans, tuna or whatever

uggggh I'm so bored though! DD will eat anything and I've totally relaxed about weaning DS, we just give him bits to try.

problem is we only do online shop once a fortnight and salad stuff tends to go off unbelievably quickly, I keep throwing away bits of lettuce

I dunno. I'm in need of inspiration... help please! TIA.

Fishcakes? - I make a huge batch every 2 months, they cook from frozen, in oven, for about 20 mins. And while I am making them I often make potato croquettes or veggie-type cakes (eg sweet potato and red pepper)

Soup? - freeze pots of homemade, make it really thick so toddler can eat with spoon and not much mess

Noodles? - maybe with tinned sweetcorn, frozen peas

Omelettes? - with bits of cheese and veg in

You could blanche lots of chopped veg and freeze it in small bags ready to cook quickly when you need them. Broc, beans, peppers, onions all come out well.

I hate salad stuff unless it's super-fresh so I dont really bother with it, just use veggies from freezer or sometimes fresh from the village shop on way home from school run

Potato cakes/straw potato cakes... Chicken or quorn with roasted veg in tomato sauce, jus chop some peppers/mushrooms/carrots or what ever you have roast for bout 20min depending on how much your cooking then throw in some chopped chicken or quorn a tin chopped tomato, some italian herbs, seasoning and i like some crushed garlic too, cook away for about 40min goes with mash rice or anything really i do a easy tomato sauce with hidden veg which i use for so many diff dishes loads of pastas, i use it for mince with garlic bread on top baked in the oven... mince in the tomato sauce n pittas or burger buns with grated chedder (messy but yum) i also add a few laughing cow triangles to my tomato sauce when im blending it sometimes for a lovely creamy variation... i find a quick egg fryed rice/noodles very handy in a pinch... And couscous mixed wit peas & raisins another super fast yum on its own or with some mince patties/burgers or anything really homemade pizza another one of my little ones favs, iv a very simple recipe if you'd like it? im another big one on makin big batches of simple soups, hope u like some of my ideas xxx

Quiche
Soup (with dippy soldiers - both of mine love thisbroccoli one
Pasta bake (eg tuna and sweetcorn or aubergine)
wraps with omelettes
kebabs (you can marinate them overnight, then 10 min grill)
polenta (again, make night before, cut into slices and grill cheese on top)
Filled portabella mushrooms (cheese & garlic is good)
dippy eggs
savoury pancakes (have bowls of bacon, mushroom, grated cheese, spring onion, fry it up a bit then pour batter on top)

off to get some breakfast, this is making me hungry!
