Help! Urgent! I have a lb of mixed fish/seafood and no ideas

An hour till dinner time prep starts and I've got nothing.

Usually I'd do a seafood stir fry, but we had stir fry last night. Or pasta, but that works better with a straight marinara mix, not so much with the fish chunks.

Fish pie? It's chunks of white fish and salmon and a few scallops and mussels and things, basically. And I hate making pastry, does fish pie have to have pastry?

What else could I do?

have you mash? (or the wherewithall) celery? carrots? cheese? then yes to fish pie. google Jamies fish pie and theres a little video of how to make it, its dead easier and delish

tortoiseonthehalfshell · 31/03/2010 07:23

Can't abide celery, but have the other things.

Haven't ever had fish pie, to be honest. But that's no reason not to.

well I hate celery too tortoise but its soo grated up in this recipe along with carrots and cheese you won't even know its there I promise. But it kind of needs it for flavour

tortoiseonthehalfshell · 31/03/2010 07:36

Ah. I can't go to the shops before dinnertime, though, so if it's necessary the recipe is out.

Hmm.

I think fish pie usually has mash.

(put extra cheese in the sauce though, it can be very bland)

Seafood risotto?

tortoiseonthehalfshell · 31/03/2010 07:37

Oooh, risotto. Would that work with chunks of fish? Am off to google.

Make fish pie.

Fish pie doesn't have pastry, it is topped with mashed potato like shepherd's pie.

Just cook the fish in milk, then make a white sauce out of the milk, add some nutmeg and the seafood and chunks of fish, put the fish and sauce into a die dish, add chopped boiled egg and a sprinkling of parstey if you want, and top with mash (a mix of sweet potato and potato is nicest) and put in over till mash is browning on top.

I don't like cheese on my mash but some people do.

Bucharest · 31/03/2010 07:40

Yes, small chunks.

dp does a fab one, just buys a mixed bag of shellfish, squiddy type stuff and small chunks of white fish. Make it the same as an ordinary risotto. Some don't put cheese in it, but I like it more with a bit in.

overmydeadbody · 31/03/2010 07:40

I think a fish pie would be nicer than risotto.

If I was in a restaurant I'd choose fish pie, if that's any help!

tortoiseonthehalfshell · 31/03/2010 07:55

But would you choose fish pie without celery in it?

OP posts:

Yes, the celery is just there to add flavouring. (dp is ex-cheffy and puts teensy tiny bits of celery in everything, along with carrot and onion microscopic bits, it's got a fancy name I can't remember, but I never bother.)

tortoiseonthehalfshell · 31/03/2010 12:06

Well I know you have all (...both) been on the edges of your seats, so I shall provide the much anticipated update.

Got home. Husband: So what's for dinner? Me: Fish pie. Husband: Oh! I had that recently, at [business conference]. It was terrible.

Realise we not only have no celery but also no smoked fish. Fling recipes out of the window (not really) and improvise.

Readers, I made the best fish pie EVER.

500g mixed fish and seafood.
700g potatoes
3 eggs
A courgette
A carrot
An onion, finely chopped
100g frozen peas, although spinach would've been nice too
A lemon, or equivalent juice
150g cheddar cheese
3 strips of bacon (chopped)*
Olive oil
Salt
Cracked black pepper
Sumac
Dill
Cayenne pepper
3 TBs butter, melted
A couple of TBS of heavy cream

1.Put eggs and unpeeled potatoes in pan, boil for 10 minutes. Drain in colander.

  1. Fry chopped bacon and onion till crispy.
  2. Meanwhile, grate courgette, carrot and cheese into big heavy bottomed pan.
Mix in the fish, bacon and onion, and all the spices, to taste. Drizzle lemon juice and some olive oil on top.
  1. Peel and quarter eggs. Gently fold into mixture.
  2. Peel and coarsely grate potatoes. Combine with melted butter and heavy cream. Top pie.
  3. Bake in 180C oven for 35 minutes.
  4. Eat.
  5. Eat some more.
  6. Sneak downstairs after family is in bed and eat another bowl.

Brilliant!
have copied recipe to document for later!

tortoiseonthehalfshell · 31/03/2010 12:39

You might want to note that I forgot to say, mix in the peas with the other veg. But I expect you'd have worked that out.

In my opinion Fish Pie should Never ever ever contain celery.

So your recipe gets my approval!

taffetacat · 31/03/2010 20:13

sumac and bacon in your fish pie eh? very inventive - must try. I absolutely adore celery. why does the bacon have an asterisk?

The celery onion carrot combo is a holy trinity the French call mirepoix.

tortoiseonthehalfshell · 01/04/2010 02:05

Oh! Oops. Because, I was going to put something at the bottom saying, if you don't eat bacon then chopped anchovies would work well. That's actually what I was going to use, but didn't have any, so substituted the bacon.
