They're meant to be awesome for baking cakes, but I haven't any actual experience - just a Nan in the WI

Oh. I was coming on here to boast I'd made some fantastic apple pancakes this morning with duck eggs but I see you've done breakfasty stuff.

Before now I've read that they're too strong flavoured for baking, but that isn't my experience at all. They make outstandingly good cake.

Or bread & butter pudding? Or Yorkshire puds?

Mayonnaise?

MayorNaze · 29/03/2010 12:01

oh they are MARVELLOUS for baking, get cracking, literally i buy them especially when i want to make a special cake

I like them poached with steamed sprouting broccoli spears (or asparagus in season) with anchovy butter.

DaisymooSteiner · 29/03/2010 17:37

I just use them as I would normal eggs.

MathsMadMummy · 29/03/2010 17:43

I just love them boiled (soft-ish) they are so rich and yummy! We have them as a treat instead of normal eggs. TBH I would feel like I was wasting them by using them in baking! But I don't do baking so I can't really comment

Bake a victoria sponge - weigh the eggs and then use the same weight of butter, sugar and SR flour.

It will be light and delicious.
