duck eggs need to be used any ideas?

Any thoughts on quack eggs? i've got some in the fridge that need to be used up pronto. We've exhausted breakfasty things......

Before now I've read that they're too strong flavoured for baking, but that isn't my experience at all. They make outstandingly good cake.

Or bread & butter pudding? Or Yorkshire puds?

I like them poached with steamed sprouting broccoli spears (or asparagus in season) with anchovy butter.

I just love them boiled (soft-ish) they are so rich and yummy! We have them as a treat instead of normal eggs. TBH I would feel like I was wasting them by using them in baking! But I don't do baking so I can't really comment

Bake a victoria sponge - weigh the eggs and then use the same weight of butter, sugar and SR flour.

It will be light and delicious.
