girlie evening supper - what to make? Have to do it this afternoon ready for tomorrow - any ideas please ladies?

Lasagne or spag bol? Make sure it is something very substantial, to soak up the alcohol!

THis is SOOOO quick and easy and looks great:

Fillet of Salmon (1 per person) spread top with green pesto and wrap each fillet in a slice of prosciutto ham. Bake for 8 mins in oven (180 degrees) Serve with New Pots and green salad or veg x

I normally do something that I can prepare in advance and bung in the oven.

Lasagne (tasted better the second day anyway)

Stew - I did a fantastic Guiness and Beef Stew recently, served with homemade Soda bread which was ridiculously easy to make.

or something cold, served with salads like Quiche or Roast Chicken.

Mexican Chicken (in slow cooker or on hob).

Breast of chicken per person
Per 2 people - can of spicy beans (tesco is good)
Per person - a pepper, vary colours
Per person - half an onion, chopped.
Mushrooms if you like.

Fry off veg and chicken, pour in beans, cover in chicken stock, cook on low for a long time!

Serve with tortillas (or in tacos), salsa, refried beans if you like, salad.

Drink Margharitas!

Pudding - Ice cream. With maltesers you have frozen for a coupel of hours then smashed up and poured on top!

Chilli con carne - tastes better for having matured overnight - serve with baked potatoes and/or nice fresh bread, sour cream and optionally tortilla chips, gaucamole & salsa for munching

Pud - if you have time - deep-fried tortilla wedges with cinnamon sugar with ice cream

Chicken curry - make the curry sauce, cover thighs/wings with dry spice or curry paste and bake either now or tomorrow. Mix together, heat til piping and serve in a pot.

Cauliflower curry - can be reheated

Aloo Gobi - curried potatoes.

Buy some bhajis, poppadum and pickles. Serve these while cooking rice (8 mins in tons of boiling water, drain, cover and leave to steam for further 8 mins, but can be left longer if you want to stop and eat poppadum too), then put everything in big pots on the table.

serve with yoghurt and chilli salad

Dizzys white choc cheesecake (recipe on the finder somewhere) is delicious and can be made today for tomorrow. Serve with berries. Yummy!

Oooh yes cheesecake is perfect for girly supper (although due to severe aversion to white chocolate I would go with hummingbird bakery new york cheesecake (or proper chocolate version) myself)

Really easy again... Buy some frozen berries (any, raspberries & blackberries go best)
& White chocolate. Melt white choc with a splash of cream until smooth OR buy a ready made choc sauce. Put frozen berries in ramekin or similar small dish just seconds before serving, heat choc sauce so HOT and pour on top and serve Da Daaaaa!! I'd like to know what you ended up doing, Yogabird.

just dashed to supermarket without the bloody list!!! so grabbed the following since there was no time to come home and get it and then go and do the shop and cook it and go off and watch dd1 in the schooll run at 2.30- OMG is that the time? More later!

and bought large mushrooms, onions a leek, some stilton and am thinking a starter based on those - suggestions if you will, girls oh and I have some basil too.

Main will be salmon wrapped in proscuitto with pesto a la IzzyB - thanks - served with jacket spuds and broccoli

pud bought large pot of cream and tarte framboise ready made. Have ice cream in freezer and frozen blueberries. Toffee and walnut ice cream though. Have some frozen apple and rasp from the garden, some dark choc.amaretti biscuits and dried fruit. a pineapple a box of choc fingers, 6 broken mini meringue nests - what do you reckon?

oh and I have some red and yellow pepper too and some rocket salad leaves

the girlie evening is going to be fun - a few friends. Dh out for the evening: plan dc's to bed, girlies arrive, eat drink and be merry til late and then off they all go, dh arrives back and washes up!!!! (perhaps the last part won't go as seamlessly as I hope )

Mix the Stilton with rocket and basil, stuff the veg with them and grill

Would that work?

have fried off garlic onion and rocket

propose mixing in some crumbled stilton adn then baking and serving with rocket salad
