Am making some fancy cup cakes my ds's dance school with hope to sell them on regular basis,

So I would like please

lemon cupcake recipe
orange
chocolate
vanilla

Will be using fresh juice to flavour if that's possible, want to avoid artificial if I can

Also, can I just use cake recipies and put in cases?

Also can you recommend a good cup cake book please, I've looked on Amazon but would like a personal recommandation befoe I splash out,

Well, if you want proper Cupcakes as opposed to Fairy cakes - then this is a really good recipe.

Vanilla Cupcakes

120g plain flour
140g caster sugar
1 1/2 tspn baking powder
45g unsalted butter at room temp
120ml whole milk
1 large egg (free range, obviously)
1/4 tspn vanilla extract

Mix the flour, sugar, baking powder and butter with a pinch of salt, using a hand held mixer or food processor until you get a sandy consistency. Add half the milk and mix again.
Whisk egg with vanilla and remaining milk then pour into flour/butter mixture. Mix for a few minutes until it is smooth.
Use the large cupcake/muffin type cup cases and fill them 2/3 full. Bake for 20-25 mins on 180/160 fan/ gas 4.
They will have lovely flat tops ready for icing/frosting.

For lemon flavour, just add zest of a lemon to mixture.
For Orange, add zest of an orange.
For chocolate, take out 2 tbsp of flour and put in 2 tbsp of cocoa powder.

It's not one of the flavours you've mentioned, but have a search through the recipes on here for 'hummingbird cakes' - dizzydixies will have posted it up. They're delicious, really moist and tasty - full of pineapple and nuts - and so easy to make.

I always use less sugar than the recipe states as I find them a bit too cloying otherwise. Plus there is then room for more delicious cream cheese frosting on the top
