arrgghh too much oil in bolognaise sauce - any idea how to rescue?

clearly wasn't concentrating but have ended up with too much oil in the sauce and now it is looking rather greasy. don't want to consign it to the bin and sure it will be edible, just not particularly delicious (and I made double for freezer portions, gah).

any idea on how to salvage it please?

Let it cool and the fat hardens at the top, then all you have to do is scrape it off.

Lay a slice of bread on the top to absorb the oil

Put in a tall jug in fridge for 1 hour then skim off fat. Then boil it up again.

Let it cool down and the oil will rise to the top and you can scoop it off, or ideally refrigerate overnight and it will solidify to make the scooping easier!

fling in ice cubes now, the fat will solidify around them and you can lift them out again

Obvioulsy dont boil up the portion you want to freeze.

thanks all - I think the sauce needs to be thinner to scoop anything off the top - will give it a blitz and let it settle and see what can be done. unfortunately most of it is for freezing, it's ds's favourite (not for long if he gets served this batch!)

I just tip the pan a bit so all the fat drains to one side, then put one corner of a sheet of kitchen roll in the oily bit - you'd be suprised how much oil a sheet of Bounty can soak up!

I use bounty as well. Even if the sauce is thick, the fat often separates out on top, if left to settle.

My mum has got one of those giant turkey baster sucky things, that I always think must be the things people use for artificially inseminating cows. She sucks up the fat using that.

Whoamireally, no; much too big for that. By brother-in-law insemintaes cows for a living (artificially, I must add) and it is a thing like a drinking straw. You could do a dozen cows with a turkey baster!

If it needs to be thinner put some water in then chill and scrape.
