I'm trying to make a chicken pie with not much chicken

they ate most of it in sandwiches (leftover carcass) so there is very little actual chicken left . I'd already made the pastry when I realised.

What can I do?

I've a vague recollection of eggs sometimes appearing in chicken pies - how?

just stuff it with vegetables - leeks, mushrooms, carrots, a few diced spuds, dab of cream and some herbs and it will be lovely

eggs in a chicken pie sounds dodgy to me

Ham or bacon would also work well if you have any. And I always mix in leftover gravy.

I think caraway seeds go well in a chicken and leek pie. Poss. not with mushrooms though. Or bacon.

Make a thick roux using chicken stock instead of milk - that will add chicken flavour - and stuff full of veg - leeks and mushrooms will work very well.

A chicken stock cube + plenty of veg.

Celeriac, leeks, carrots, potato, parsley stems, fennel, broccoli.

Spring veg chicken pie: whatever chicken you can rustly up: stock from carcass or cube if necessary, used to make a roux as mentioned above, with proper butter and flour; then add in pre-cooked leeks, mushrooms, onions, carrots, and most of a bag of frozen peas plus (these are crucial) herbs - fresh tarragon is lovely, but failing that thyme and rosemary. Also a touch of garlic. YUM.

Made up chicken-pie-with-peas one day when I had proper foodies coming for lunch and was worried that my planned roast wasn't big enough. Ended up with delicious chicken pie that everyone loved, served with buttery new potatoes and lots of wine. Delicious. Actually, white wine in the sauce is good too.
