Hummingbird Cupcakes - anyone made them look like the ones in the picture?

Had my first attempt yesterday and they were awful. Didn't rise at all and the sponge really stuck to the cases.

The only thing I didn't have was whole milk, so used semi instead - would this really have made much difference.

I was hoping to get that lovely peaked rise on the sponge like the picture.

Ok upon eating another today, they are not sticking to the cases - must of been eating too soon out of the oven before

So anyone made them look perfect like the recipe photo?

Was your butter really soft?

They don't rise a great deal IME I fill the cases much higher than I would for a fairycake. The sponge is nice however and does not stick.

Does soft butter make a difference? I noticed a difference when I used by Kenwood Chef. My house is so cold that our butter is never soft.

The butter was in the dish overnight, but yeah was still not really soft.

Oh well, will give them another try with whole milk and very soft butter.

ive made them, they are lush!!!!

i used ss and whole milk, both turned out the same, v light and spongey.

mine looked better as i iced the buttercream on properly!!!

p.s. ive even microwaved the butter when it comes out the fridge if needed, does seem to help, and really spend the time it says on the mixing, even if it looks ok
