3 and a half pints of milk! What to do with it all?

Milkman isn't coming again until Tuesday, so I think we probably need to get shot of a pint, maybe a pint and a half. It's in glass bottles so can't really be frozen.

What would you do with it? We're vegetarian. Thanks x

macaroni cheese and rice pudding

TBH, I'd put it in a bag in a plastic jug and freeze it. When you want to defrost it you can just put it back in the jug.

Def macaroni cheese, or a nice potato and leek soup. Or lasagne. Or anything involving white sauce! Angel Delight!?

Def rice pudding. I love rice pudding!

Cocoa in the evening! DP likes porridge which uses some up too, but cocoa does us both well.

Fudge

300ml milk
550g sugar
100g butter

Then it's whatever flavouring you want:
3tbsp coffee essence (or from your coffee cup)
2tsp vanilla essence
50g chopped glacé cherries

Bring milk slowly to the boil. Add sugar and butter. Bring slowly to the boil again.
Cover and boil for 2 minutes
Uncover and boil for 15-20 minutes stirring occasionally.
Temp should reach around 270F (if you have a sugar thermometer - which should be put in from the start). 270F is Soft Ball stage, is using the drop a teaspoon of mixture in a cup of cold water.
Remove from heat and add flavouring.
Leave to cool for 5 minutes
Beat it well and put into a greased tin to set.

Make lots of cheese/white sauce and freeze it in portions.

And/or freeze some in an ice cube tray(then pop out into plastic bag) as emergency milk for tea and coffee.

Leak and Pea Flan, Broccoli Flan. A flan will use 1/4 or 1/2 a pint depending on the recipe.

Wow, what great suggestions! We've had pancakes for breakfast, planning to make some cheese/white sauce for the freezer, and maybe a crumble with custard later. Mmmmm.... thanks!
