Can I freeze mascarpone/fromage frais?

I am making a cake that uses both mascarpone and fromage frais in the icing.

Usually I make a huge cake and freeze some of it in slices, but would it be ok to freeze/defrost with these in the topping?

Am inclined just to do it and see but don't want to revolt/poison anyone when they eat a defrosted slice!

Hi pollywollywoowah!

Yes, certainly you can freeze fromage frais/petit filous (I always freeze the frubes variety and the kids love it) -- not sure about mascarpone, but cant really see why not.

After all, you can freeze milk and cheddar cheese so it makes sense. Or is that just sense in my world?

Happy Baking. x

Thanks! It makes sense to me too.

I will freeze and hope for the best
