Like curries but trying not to eat rice? Here's a food swap tip

I've been trying to cut down on the carbs, but I do like a friday night curry, so instead of having rice with it, I grate carrot, lay it inbetween sheets of kitchen towel to get most of the moisture out, and use that as 'rice' instead of rice. Surprisingly it's not a painful swap. Just thought I'd share that with you all!

Variation on the theme is to grate cauliflower and fry in butter/oil to make cauli rice.

Those sound really tasty! Going to try the cauli one tonight.
I normally have green salad with curry (low-carber for 2ish years), and poppadoms are 4 carbs each so a couple of those for a treat.

I am making lamb korma from scratch tonight. DH would not be impressed if I suggested we have grated carrot instead of rice but it is a great idea.

Also low carb - have bolognese sauce on steamed spring cabbage instead of spaghetti. It's actually far nicer.

I make a carrot salad with spices for with indian food, though do have to use a tiny bit of oil it is mostly raw grated carrot. It is tasty!

I'm not eating rice atm, usually just have a couple of chapatis instead, which is a bit healthier than rice.

Oh and my mum eats chilli on a bed of cooked white cabbage, though not tried that one!

I do eat rice but waht is great is a very easy carrot sambal.

Grate a pile of carrot.
Heat a couple of tablespoons of oil.
Add a couple of tablespoons of black mustard seeds until they pop, then add the carrot and stir briefly until it starts to cook (matter of a couple of minutes, if that) Put the heat off and add juice of a couple of squeezed lemons.
Leave for flavours to develop before serving.

Sounds good but I dont have mustard seeds everything else - what else can I use for this?

cumin seeds would work, although obviously flavour would be a bit different.

Thank you for sharing such a great idea Chickiolina, I would never have considered replacing the rice with carrot. I?m already a big fan of carrots so am looking forward to trying this one out.

If you want to eat less rice why don't you just serve up a smaller portion? Nothing wrong with cauliflower and carrots etc. but they're not rice are they? Brown rice is more nutrtious than white. Basmati has a lower GI than starchy long-grain. Brown basmati is the best of both worlds and if you measure out 1oz and then cook it you end up with a nice-size portion and it's just 100 cals.
