quick & easy supper for DH & I tonight... inspire me!

DH is out PTA-ing, and I'm knackered. What can I make us to eat when he gets in which won't be until 9ish?

I have:

portobello mushrooms
onions
about half a cauliflower
carrots
half an orange pepper
canned pulses
half a bottle of white wine that's been open too long to drink (I'm pretty sure)
pasta, risotto rice, basmati rice, couscous
potatoes
a well stocked spice rack

Obviously, your suggestion does not need to include all of these. It's not Ready Steady Cook .

But any interesting ideas would be well received.

erm...a savoury veggie crumble?
mushroom risotto as you've got the white wine to use up?

A veg/ pulses curry. Mmmmm...

A veg pasta bake with onions, mushrooms, cauli, carrots and pepper (or some of these!). Cheese on top. Could cook it all in a white sauce, or make a tinned tomatoes and veg sauce for the pasta.

Mushroom Risotto (and thyme or tarragon maybe) - use left-over wine and onions too. Keep it simple (think it would be weird with all the veg in a risotto).

Not sure this counts as interesting ideas, but certainly do-able!

I would do a risotto using the onions mushrooms and white wine. add garlic, parsley, cheese if you have those as well. I guess pulses might go ok in it too, not sure though.

great minds evidently thinking alike.

Think I'm going for mushroom risotto, having found some dried porcini as well. And I think I might just roast the cauliflower in a bit of chilli oil to be what DH calls an 'amuse-bouche'

(He says this in a tongue-in-cheek manner, he isn't really the world's most appalling ponce)

Oooh, yes, porcini would be yum in it.

V impressed that you are doing a starter (ok, amuse bouche) as part of "quick and easy"! What are your weekday meals like when you have more time?!

noooooo.... whilst it's lovely that you're impressed, my planned weekday meals are a lot more along the fishcakes / lasagne / shepherd's pie route!

It's only really when I havn't planned and go off piste with ingredients that I get in any way creative, trust me.

By the way, this is what I did with the cauliflower, and very nice it was too.
