Easy but yummy cupcake recipe needed for DDs Christening Cake!

Hi All,

Following a weekend on my feet exhibiting at a Wedding Fayre, I couldn't fail to notice all the gorgeous cup-cake exhibits and have decided that instead of a traditional cake for my DD's christening, I would like to do a tower of cupcakes.

I would love to make the cupcakes myself but need a fool-proof recipe for both cupcakes AND frosting/buttercream icing.

If possible, I'd like to do some flavoured cakes (maybe strawberry!), not just plain. I am normally very good at standard sandwich cakes and add my own flavours. They always turn out really well, but I'm concerned about keeping the cupcakes flat enough to ice - don't want the peaks that I normally get when I try and do buns instead of sandwich cakes. I'm planning on decorating the tops in lots of different ways, so peaked frosting, swirly etc with different edible embellishments, in pink obviously!

So MN cooks (or would you prefer Chefs? ), all recipes and advice gratefully received.

I already have some beautiful cake-stands and need to make about 50 cakes to cover everyone that is coming along.

If you have a good recipe that works well for you, just cut the peaks off! That's what the professionals do.

{grin] - great idea Seeker, hopefully my perfect frosting - once I've learnt how to do it - will hide the fact that I've cheated!!
