What to do with a load of Lemon Sole?

I found this in the freezer - 8 large fillets and don't even remember buying it.

Will it be okay to eat (it's best before 21/11/09 and if so what can I do with it?

I don't cook fish very often - prefer seafood.

I would still eat it!

you could keep it simple and just poach it, or if you want to use it all up, make a fishermans pie. Add prawns and other seafood if you prefer it that way. Once you have cooked it in a pie you can freeze it again if it is too much for one meal. Then defrost and reheat another week.

Assuming it looks ok when defrosted (not freezer burnt, eg), this is quite yummy:

marinate in:
lemon juice (2tsp)
garlic 1/2 tsp
ginger 3/4 tsp
salt
pepper (quantities based on amount for 2 people, double up accordingly_

for at least 30 mins

then dunk in :

  1. bowl of flour
  2. bowl of beaten egg
  3. bowl of seasoned breadcrumbs (I used paprika and crushed dried chillies)

pan fry for a minute or two on each side

We have it with potato wedges and salad.

Thanks! I've taken half out to defrost - there's only me and two DC but DS is a fiend for fish.

I'm not really a fan of fish pie, it's a bit too mushy for me!

I might well try making goujons with that recipe though so thanks MrsJohnDeere. Do you know if I could freeze them after making them?

I personally wouldn't refreeze something that had already been frozen without cooking first, but I'm a bit paranoid about food poisoning.

Hmm my thoughts too.

I'll probably do them with a few homemade chips and peas and no doubt DS will wolf them down.

Do you think it will be nice with some Garlic mayo? I'm looking for an excuse to make a batch. hehe

Lemon sole - dust with flour and pan fry in a bit of butter and a squeeze of lemon - absolutely delicious.
