Mum just told she has diabetes and want to make her a birthday cake for tomorrow - help!!!

Does anyone know of a decent cake recipe that's suitable for diabetics? She won't have any treatment until monday probably, if that makes a difference?

Sugar Free Banana cake:
4oz flour, 1/2 teasp mixed spice, 2oz butter / marg rubbed into flour. Add 3oz raisins, mash 8oz of banana with one egg and add to flour. Bake at gas mark 3 / 160 / 325 degrees for an hour.

More of a banana bread, but pretty good.

you can cook with some artificial sweeteners, check on the packets it should say if you can.

Something called xylitol is apparently safe for diabetics and looks exactly like sugar too. It is recommended by Patrick Holford (a nutritionist) so no worries like you get with aspartame. You can get it from most health food shops. It's not that cheap, but if it's a special occasion then worth it.
