Need inspiration for Dinner tonight - Have pork loin...

I have a bit of pork loin (or is it fillet? or are they the same thing??)

Anyway, I am stuck for ideas on what to make with it. DP is a bit bored with what I usually do, so have come here for inspiration.

Inspire me

Have usual store cupboard stock, have some veg in and the usual fridge items...

Is it the long bit?

My favourite way to cook it is to slice into medallions. Flour, egg and breadcrumb them and pan fry in oil in a wee bit of butter. Once golden transfer to oven for another 10-15 mins.

I serve with linguine and a homemade tomato sauce and melt mozzarella on top of the pork

In no way weight-watchers approved but blood gorgeous and one of DP's favourite dinners

Your idea does sound nice, I do have all the ingredients you have specified. Will ask DP if this might be to his liking.

Blonde - I'm afraid DP does not like mushrooms (picky bugger) so can't do that one. Thanks though

He is definitely more picky than me, that's for sure.

I thought I was alone in that respect too, all my friend's partners seem to eat whatever is in front of them.

I'd do the snitchel thing, beat them flat the flour/egg/crunb them and fry

or

cut into chunks and casserole with onions, peppers and paprika, serve with flat noodles or rice.

The casserole need sour cream or creme fraiche at the end (or cream soured with lemon will do)

Last time I had a pork fillet I made this Sweet & Sour Pork and it was lovely.

I did a thing last time we had that which roasted it sliced almost through into medallions, with garlic, fried onions and cheese stuffed into the gaps.

It would have been even yummier if I hadn't overcooked it slightly.

DH did pork fillet 'pan-roasted' (browned in butter&oil and then chucked in v. hot oven for ~10-15mins) served with melted butter & garlic - I would have served tagliatelle with it, but he went for mash. t'was good.

Just came back on to let you know what DP decided for his tea last night

He chose Meltedmarsbars idea of a pork casserole served with rice. It was lovely. SO thank you Meltedmarsbars
