I have a tub of ricotta about to go out of date. Any ideas on what to do with it?

Sweet or savoury?

I was thinking spinach and ricotta but no spinach and won't get to the shops this morning.

I used to mix it with tuna and seasoning etc[vague] and use it to stuff cannelloni or pancakes.

All my family adore courgette and ricotta pasta - you need 500g of pasta (penne or orecchiette), 3 courgettes, olive oil, garlic, ricotta, parmesan, basil.

Thanks for all the ideas. It was the first time I bought ricotta but will definitely get it again.

They all sound delicious. Went the boring route though and used it in a lasagne to use up all my aging veg.

Definitely going to try your recommendations.
