Caribbean food using every day ingredients. Any ideas??

I have a caribbean cookbook but all the recipes involve at least one ingredient that I would have to get from a specialist shop and I don't know enough to know what to replace it with.

Any experts out there who can recommend any yummy chicken / fish dishes that I can make using waitrose / sainsburys??!?

Have you been watching Rhodes across the Carribean? Rhodes irritates the hell out of me, but the recipes look fab, and are made with easily obtainable ingredients. here

There's quite a lot in Levi Roots' book that you can make just with regular supermarket ingredients. And also, not everything is so highly spiced it will take your head off, which makes it a bit easier if you've got young DCs.
