belgo · 21/02/2010 10:14

roast chicken

If you do the stew, maybe just take out some of the chorizo if you think it's too salty?

Combine the two - I am doing Roast Chicken with butternut squash and chorizo - I have done it a few times and it is very tasty

chorizo and butter bean stew. But then for reasons unknown, I am craving heat (as in chilli, paprika sort of heat) in all my meals at the moment. Cooking roast beef today purely to slather it in horseradish.

And yes, bring on the recipe!

overmydeadbody · 21/02/2010 13:56

I'd prefer the chicken.

The stew will be fine for the baby, how much chorizo are you putitng into it? I doubt it would be enough to worry about salt levels...

2 tbsp olive oil
300g/10oz chorizo sliced
i onion, cut into wedges
2 garlic cloves,crushed

500g jar passata
400g can kidney beans drained
400g can butter beans rinsed
2tbsp chopped fresh oregano
salt and pepper
2tbsp chopped parsley.

Heat olive oil in frying pan and briefly fry the chorizo.Add the onion ,garlic, red pepper and chilli and cook over a edium heat until soft.

Transfer the chorizo mixture to a large pan. Add the tomato puree ,stock, passata, beans and oregano and stir well.Bring to the boil then reduce the heat, cover and simmer for 20 mins stirring occasionally.

If the stew is a little thick add a little water then season to taste and stir in the parsley. Garnish with a sprig of oregano and serve with rice and crusty bread.
