How long should a homemade veg lasagne keep in the fridge?

Made it on saturday and meant to freeze it but forgot. Been in the fridge since.

It has veg, tomato based sauce and a jar of bought white sauce.

Is it still edible today?

Sorry to hijack but how do you make your veg lasangne?

I made one and put mushrooms in it. The texture was a bit slimy and put me off. What veg do you use?

it'll be fine today and possibly even tomorrow.
i wouldn't keep it any longer than that if you're serving to children (because of the white sauce) but if to adults, then a couple more days will be okay.

I know I wasn't asked but I do mine with roast aubergine, mushroom, peppers, red onion and courgettes. Because they are preroasted the veg is much drier when it goes into the sauce.

I used red and yellow peppers, red onions, garlic, butternut squash and courgette roasted in the oven and added some chopped up carrots that I had boiled first til they were almost oooked.

I make the sauce using passata, tinned tomato, herbs, balsamic vinegar, paprika - anything that catches my eye and reduce it a bit.

Usually make my own cheese sauce but cheated with a jar this time.

Roasting the veg is the key to a good texture then!
