Doing a big pot of this for tomorrow with butternut squash rather than pumpkin, have lots of family over. Wanted to do a version also with chicken in ( have some boneless chicken thighs ) as have some "Yeah, but where's the meat?" types coming.
I don't think I want to just add chicken to half of it, as I don't think it will go with the butternut squash.
I'm thinking make the sauce/base then put butternut squash in to cook for one half and put chicken thights and ?? in the other pot.
Any ideas for the ??. Green beans? A few don't like aubergine so not that.
Thoughts appreciated. DH visiting supermarket now....
