Lots of stale bread - but I don't want to make breadpudding

Much as dh and I love bread pudding, it doesn't go down too well with the dc.

Is there something else I can make with stale bread? (Other than a stock of breadcrumbs.) Anyone know whether there's a cake recipe for breadcrumbs, perhaps?

French toast? Don't know a recipe for a cake with breadcrumbs though.

Mix them with cheese and top a pasta bake with them gives it a lovely crunchy topping

Forgot to say, it needs to be more-or-less dairy-free. I don't ask for much, do I?

The birds round here won't touch anything I put out on my bird feeder.

Italian Bread Soup

There are a variety of these if you don't fancy this one. Loads of recipes on line.

Croutons with another soup.
Breadcrumbs for the freezer.
Brushcetta
Toasted sarnies.
Corned beef or tuna flan (have a recipe for this)

Assume if you eat bread & butter pud, that eggs are ok?

I have just made some pork meatballs - from Nigel Slater's Kitchen Diaries, which are about my favourite thing to eat - pork mince, breadcrumbs, parmesan, anchovies, lemon rind and juice, parsley, thyme. Fry. Inhale. Yum.

Mmmmm...good stuff!

It's heel ends of home-made wholemeal bread, rather than light white French or Italian bread, but if anything I expect that will only make it more flavoursome.

And I love that Love Food Hate Waste website!

Just something on Today programme about leftover bread!
Could whiz it and freeze the bread crumbs
or
make chunky stuffing as a side dish (fry onions, celery, sausage meat; mix milk or stock with egg, let soak into stale bread chunks; mix all together & bake)

I made that Tuscan soup. Looked good as it was, but I whizzed it up because ds1 is fussy about lumpy textures. It was excellent!

Next time, treacle tart or the apple and breadcrumb cake.
