It's still nice and fresh, no wilting yet, but I reckon it doesn't have long left.

Salmon and spinach risotto - yum

LowLevelWhingeing · 10/02/2010 12:26

soup? (healthy)

creamed garlicy buttery spinach as a side dish? (not healthy)

steamedtreaclesponge · 10/02/2010 12:27

Wilt the whole lot in butter and have it on the side of your dinner - I can easily eat an entire bag that way as it shrinks so much!

Mix with soft cheese and stuff cannelloni. Cook with tomato sauce in a foil dish and then freeze if you don't want to eat it today.

make Dal with yellow lentils, tomatoes, onions, ginger, coriander powder, garam masala powder add spinach at the end, serve with lg rice.

You can freze them and lift them out for lunch boxes too.

Want me to put the recipie up?

MrsJohnDeere · 10/02/2010 13:05

stir into curry sauce - will shrink to next to nothing

defineme · 10/02/2010 13:06

yes please to the muffin recipe- I have spinach too!

GibberingGinger · 10/02/2010 13:09

I freeze fresh spinach if I have too much, and then crush it when its still frozen (into powder almost) and put it in chilli and bolognaise. Brill way of sneaking veg into children (and adults!)

spinach, avacado and parmesan salad with honey mustard dressing...mmmmmmmm yummy!

Fry off diced onion in a little oil, add chopped up tomatoes (or tomato puree if no tomatoes), the spinach and a little salt and cook until the juice is starting to thicken. Really tasty and makes it a bit different.
