Any point of a vegetarian buying a slow cooker?

Is a slow cooker just good for meat eaters? Or are there plenty of veggi (no fish) recipes? Wondering if I would use it or not...they sound like they simplify mealtimes.

I do do mainly meat in mine, but today I've done a butternut squash and lentil stew!

I've got one but it is sadly under-used. I do lentil chilli, lentil soup, veggie bolognaise sauce etc in it but would love more recipes.

I've heard of people cooking dried beans in them but have never like the idea because you need to give them a good 10 minute boil to remove the toxins.

Do you have a delay timer facility on your cooker? That's something I use a lot for veggie dishes.... put all the ingredients in the morning and set it to come on an hour or three before we all get home.
