I've got 4 skinless chicken breasts..

And I don't want to bake/fry them....any ideas for a quickish tasty casserole type thing.. i am determined that the kids will like real chicken and not the evil Mcnuggit that they adore...

Do you have any bacon or parma ham? Wrap them in bacon/parma ham and roast them in the oven. It's particularly tasty if you if you fill the rest of the roasting dish with other vegetables - I like tomatoes and sweet potato, but regular potato/courgettes/onions/ could also work. Drizzle with the littlest amount of olive oil.

Oh, and if they're large breasts, I think it's better to halve them lengthways so that they are thinner and the yummy bacon/parma flavour will permeate better.

Slice & seal/brown chicken breasts in a pan. Remove & keep warm. Fry some sliced onion & bacon then return chicken to pan. Add 1 can of condensed chicken or chicken & mushroom soup with 1/2 can water and stir until all mixed in.
Chuck in a handful of frozen peas & frozen/canned sweetcorn. Simmer for 20-30 mins until chicken is cooked through. Serve with baby new potatoes or pasta

Can of tomatoes.
Sliced red pepper.
Onion.
Stock cube.
Herbs.
Tom puree.
Cook on low for 2 hours ish. Serve with a jacket spud, loads of grated cheese and black pepper.

Not casseroley but you could make chicken kebabs? Cut chicken into chunks and thread on a skewer with mushrooms, peppers, onion chunks etc. Brush with olive oil (maybe flavoured with herbs or garlic) and grill. Then serve in pitta breads with salad/rice

Oh I was going to say slice them in half, stuff them with sage and onion stuffing, wrap in bacon and whack in the oven for half an hour. My DS loves it.

Thank you all so much, I'm swithering between goober and Bling, because I have the ingredients in, but I'm going to give Iklboo's a go, too...Ooh it's like ready steady cook!!

Cut them into strips. Fry them in garlic with ginger, cinammon, star anise and splash soy sauce. Add cooked rice or cooked noodles.

Chinese stir fry

(or can use Chinese 5 spice instead of the mix)
