I've lost my AK baby and toddler cookbook. and I don;t have a copy of teh one thing in it I want to cook.

We call it cabbage surprise- the surprise being that cabbage and rice and cheese can taste that good together. I think it also has tomato in... any one got any clues? and care to share with me what the book says.

25g/1oz brown rice
75g/3oz shredded cabbage
1 tomato, skinned, deseeded and chopped
a little marg or oil
50g/2oz grated cheddar cheese

Cook rice in water till soft (about 25 minutes). Steam or boil cabbage until tender. Saute the tomato in the marg/oil, add the drained cabbage and cook for 2 more minutes. Stir in the grated cheese and cook over a low heat until the cheese has melted. Mix cabbage, tomato and cheese together with the cooked rice and chop into small pices.

You can make it into a family meal by increasing the quantities, sprinkling with extra cheese (cheddar/parmesan) and browning under a preheated grill. Or you can bake in the oven at 180degrees/350F/Gas 4 for 15 minutes.

It also says it is suitable for freezing.
