Could you use single cream with lots of cheese melted in it?

Double cream, lots of cheese and simmer over a moderate heat to thicken.

I usually use blue cheese, but have done it with cheddar and works fine.

Want it for things like cauliflower cheese to have with sausages, but dreaming up a recipe involving leeks and onions in a chese sauce, along with chicken wrapped in bacon. Nom.

The easiest way is to take a pot of creme fraiche, heat it up, then add cheddar and seasonings - no reducing required

Creme fraiche has an odd taste I don't like, though...

creme fraiche does lend a distictive taste that you either love or hate.

My friend heats double cream then adds a gloopy cheese like gruyere.
