I plan to make my own stuffed pasta this week and would love your ideas please.

I do spinach and ricotta, it is an Annabel Karmel recipe but I've lent the recipe book to my mate so can't give quantities

I cheat and buy ready made past shells or tubes then stuff them with spinach, ricotta and mascapone cheese, cover with passata and some black pepper, oregano, sprinkle with cheese and cook.

It is lovely, the recipe is in the After School Meal Planner book.

Rick Stein did one on TV once with butternut squash and ameretti biscuits. Looked gourgeous and I always intend to make that for my first attempt at homemade pasta (one day I will get round to pulling the unused pasta machine out of the back of the cupboard )

I love a mushroom filling - cook chopped mushrooms down with plenty of butter and garlic, and ideally some dried porcini or similar too, until they are very concentrated. Blend until they are quite fine(or chop them very well in the first place - harder if you are using dried ones). Then you can add ricotta or cream cheese to taste and fresh herbs.

Generally speaking you need the filling to be quite strongly flavoured, as you shouldn't overfill the pasta and you want to be able to taste it.

If you're like me you will just have got/remembered the knack of making the little parcels perfect by the time you reach the last one...
