Does anyone have a nice mushroom soup recipe?

I love soup but have never made a mushroom one, anyone arround with a delicious recipe to share?

I just fry some mixed wild mushrooms in butter with salt & pepper then add about 3/4 pint of veg stock. Leave to simmer for 20-30mins then allow to cool. Overnight is really good as the flavour really intensifies.
Blitz in a blender till smooth, reheat and serve with a swirl of cream.

This is a Covent Garden Soup Book recipe and is lovely:

25g butter
1/2 medium onion chopped
1 garlic clove chopped
40g plain flour
700ml veg stock
250g chestnut mushrooms sliced
1 tbsp fresh parsley, finely chopped
75ml single cream
salt & pepper

Melt half butter & saute onion for 5 mins & garlic without colouring. Stir in flour & cook for 1 min. Gradually add stock, stirring all the time. Add half the mushrooms & parsley. Cover, bring to boil and simmer for 10-15mins until veg is tender. Puree in a liquidiser.

Saute remaining mushrooms in butter until they begin to brown, add to pureed soup. Simmer gently for a few minutes. Stir in cream & parsley & taste for seasoning.

shonaspurtle, the soup was yummy (even though I forgot the flour so probably not as thick as it should have been) It is definitely going to be part of my menu more often!

Glad you enjoyed it .

Dh is the big soup maker in our house so I've never actually had to make it for myself. I'd probably do without the flour too tbh, although it does have a lovely consistance with (as far as I know - not having had it without I can't really compare!).
