Storing opened bottles of fish sauce, oyster sauce

and hoi sin sauce - can I ignore the instructions to keep in fridge and use within 7 days once opened? Never used them before but if I have to chuck them next week it was a bloody expensive recipe.

I've been storing ketchup in the cupboard till it runs out safely for years now and I notice we're now supposed to use that within 6 weeks.

Here oyster sauce/veggie alternative goes in the fridge until it runs out; although I think when living in Thailand we just kept it out (but went through a bottle much quicker)

Fish sauce keeps forever, no fridge needed - probably gets better with age

I didn't use to keep my oyster sauce and fish sauce in the fridge, just in the store cupboard. I did keep my hoisin sauce in the fridge though. Don't know why.
But definitely, they all keep till years on end ...

i have zillions of these type of things in the fridge. unless they split/have mould on/taste fizzy we eat them.
