I've bought a salmon fillet for the first time - what do I do with it.

I always thought I didn't like salmon but someone cooked it for me last week in a white wine sauce en croute and it was very nice.

So I've bought a fillet for tea. Would prefer to avoid a white wine sauce as I'm trying to diet.

You could just bake it in the oven - no sauce involved! Probably takes about 20 mins, wrapped in foil so it doesn't dry out.

If you've got time, mix chopped ginger, garlic and chilli a bit of soy sauce and honey stick it in the fridge to marinade for as long as you can (pref 1 hour or more). Pan fry, really tasty.
If no time stick it in the oven in foil, ten minutes before its done pour over some sweet chili sauce also quick and easy.

You could try poaching it lightly in a pan with some white wine and bay leaves until it is nicely pink on the inside

Thanks, am going for the sweet chilli sauce option tonight but will try the ginger marinade another time as that sounds yummy.

Will also give the poaching in white wine a go.

make a topping from breadcrumbs, sage,Fresh parsley, parmesan and thyme . Add half an egg to bind together. Put on top of salmon and bake open in foil for 15-20 minutes depending on thickness.

You could cheat and use paxo with parmesan added...its just as nice

I've just had salmon fillet- a thin layer of creme fraiche on top and red chillies- wrap in foil and cook for 15 mins. Lovely!

Chickne tikka but use salmon fillet. Marinated in natural yoghart, grated ginger, crushed garlic, lemon juice and rind, cumin, paprika, coridander, curry powder - baked in oven
