So I have lots of leftover roast pork from todays sunday roast. What can I do with it ?

I know I could do a stir fry tomorrow night. Or cold meat and chips ! But otherwise stuck for ideas

A warm pork and blue cheese sandwich in Spain years ago was one of the finest things I have ever eaten (I still dream of that sandwich)

Otherwise, slow cooked with onions, garlic and Puy lentils (and a bay leaf or 2)

The children always insist on stirfry with ours. I now deliberately buy the joint too big to allow for it. I prefer it with spicy chickpeas - saute some onions and peppers and add the pork, passata, chickpeas and some Encona hot pepper sauce.

went to wahaca yesterday and they had this yum thingy on a tortilla which was basically warm shredded cooked pork tossed in some sort of spicy sauce - maybe a mix of salsa with chilli and other umami stuff to give it depth with a few spring onions etc

nope, I'm out of rice. Bugger. Shall have to dream up some sort of noodley thing I suppose.

The wahaca thingy sounds gorgeous, DP would love it, but DS1 would throw a dickie fit.

slow cooking sounds good, would you use stock? but it's already cooked - does it matter ?

With hoisin sauce, cucumber and spring onions in chinese pancakes.

Or battered with sweet and sour sauce and rice.

You'd need stock for the lentils in the slow cooker, the pork should just get juicy and tender

I was in the same position last week. Refried it with mashed potatos and cabbage on Monday as a kind of pork hash and served it with baked beans. Was very much nicer than my description

We have lots of leftover pork tonight and we are having pork goulash tomorrow.

I sometimes make this Bean Goulash and then add the leftover pork and serve with rice. It is lovely.
