Your best recipe for MARINADING chicken without oil

I have bought fresh chicken, rare in these parts of the world. I want to make a good old roast chicken. But I dont have any oil, and wont be able to get to the shops!

I have butter, I have honey, I have beer, and I have red wine, and sherry. I have no oil, and no vinegar.

Can I use butter or honey? I normally mix my herbs crushed garlic and spices with oil, and cover the chicken in this for a few hours prior to cooking. I dont suppose I can just substitute the oil with either butter (maybe melted?) or honey?

Or would I be better off reaching for my bottle of sweet chilli marinade....

Yoghurt marinade...

100 ml natural yoghurt
a knob of grated ginger
1 garlic clove
1/2 chopped fresh chilli
pinch paprika
1/2 tablespoon Garam Masala
1 tsp tomato puree
fresh coriander

Blitz and marinade. Leave overnight. This is from Jamie Oliver's Chicken Tikka Masala which is totally delicious!

I just found this recipe:

1/2 cup lemon juice
1/3 cup honey
1/4 cup soy sauce
2 tablespoons finely chopped onions
4 garlic cloves, minced
2 teaspoons dried parsley flakes
2 teaspoons dried basil

and added some ginger and rosemary, and bay leaf, hopefully it will be tasty. I will find out in half an hour.

I should have added garam masala....

Poledra, thank you for pointing out my linguistic error it is of course MARINADE for chicken, and the action is "marinating chicken". An offense I think a non-native speaker would be forgiven, dont you think? It actually bugs me that you even bother pointing out others grammatical errors, but continuing in the same vein as you, you are supposed to say "is IT " and not "is TI"

You are very kind Poledra. DecorHate, I skimmed it, will revisit thread later. I am absolutely gutted about my mums rapid onset of Dementia, it has caught us all by surprise how quickly it is going. And I cannot get my dad on team with me trying to get their affairs in order. He prefers to stick his head in the sand and wait for a disaster, but what can he do, paralyzed in a wheelchair. It is so shit. sorry
