side of smoked salmon in fridge on sell-by date. What can I do with it tonight?

I have a side of smoked salmon in the fridge that was going cheap because it's on its sell-by date. I am going to split the slices up into packs of 2 and freeze, but meanwhile what can I do with it for supper tonight? I have an avocado, capers, leeks, red onions, broccoli - in fact lots of veg but no salad. Also eggs, cream (not creme fraiche) and cream cheese; and spaghetti. Want something effortless and quick. Ideas please? (We had pasta last night, but would not rule it out again tonight as tomorrow we start low-carb diet and I won't be touching it again for months... NB this means there is no bread in the house whatsoever. And I don't have an oven.)

Except I add loads more cream than the recipe suggests. Leeks and broccoli would work from your list (and red onion fine) - have you got frozen peas?

You do need to cook the salmon first. You can microwave (easiest) or probably fry it in a pan?

Spaghetti with cream, smoked salmon bits and broccoli? Steam the broccoli in small florets, cook the spaghetti, then bung it all together in a saucepan with the cream and salmon for minute or two. Smoked salmon cooks really quickly so you don't really need to do much more than heat it through in the cream, if you cut it into little shreds.

Do you have champers or Prosecco in the cupboard (and one always should )?

You could eat it out of the packet before any one's home whilst quaffing the bubbly. And let everyone else get a take-away pizza before the no carbs folly regime from tomorrow.

Ladies, you are inspired. I am going to open the Chablis (it is after 6pm here) and make blinis, to be assembled with avocado, cream cheese, capers and minced red onion as desired. Delish. Thank you!
