A new start for a new year and I don't want to go on big/slim forum as would rather share recipies so I can get cooking.

All recipie ideas much welcome!

Hi there, this is my favourite easy recipe, which is also pretty healthy (I think!).

Tomato prawn pasta (serves two)
Packet of tomatoes (c450g)
Packet of cooked king prawns (125g)
A little olive oil
Garlic (one clove crushed/chopped, or teaspoon of the lazy stuff)
Fennel seeds (teaspoon)
Freshly ground black pepper
Soy sauce (good slosh)

Quarter the tomatoes. Gently fry them in the olive oil until they are beginning to get nice and squishy. Add the prawns, garlic, fennel seeds, black pepper and soy sauce. Heat through well. Serve over linguine or any other pasta of your choice.
You can swap chilli flakes for the fennel seeds if you like a bit of heat.

My current fave is:

Red pepper, courgette, red onion & mushrooms roasted with bit of olive oil.

10 mins before ready, plonk a fillet of cod or salmon or chicken breast(20 mins before if chicken) coated in pesto on top.

Best bit is I don't even miss the carbs usually provided by potatoes or pasta!

Chicken and sweet potato casserole (serves 2)
Olive oil, 4 teaspoons
1 Onion, Thinly sliced
2 Chicken breast fillets, Halved
Plain flour, 2 tablespoons
2 medium sized Sweet potatoes, Chopped into chunks
4 Tomatoes, Chopped into bite-sized pieces
300ml Chicken stock
2 stalks, or 2 teaspoons of dried Thyme or rosemary
10 Button mushrooms

In an ovenproof casserole dish, heat the olive oil and gently cook the onion until soft.
Preheat oven to 180.
Add the chicken breast fillets and cook for a couple of minutes to brown.
Stir in the flour and add the sweet potato, tomatoes, mushrooms, stock and thyme or rosemary.
Cover and cook in the oven for 60 minutes.

LadyGooGoo - you could also cut it (sweet potato) in chunks and throw it in with your roasted vegetable dish - might not go great with the pesto, but it goes all caramelised and yummy roasted.

Easy Salmon & Pesto
On a large piece of tinfoil, place a salmon fillet on top of a large handful of green beans. Spread some pesto on the salmon and add a skirt of lemon juice. Wrap in foil and bake in a oven for about 20 mins. Salmon tastes great with the pesto and beans turn out cooked but with a bit of crunch! Lovely (recipe nicked from Jamie Oliver!)

Can you replace sweet potato with pumpkin? Would that work? I cant get sweet potatoes where I live but always have a spare half of pumpkin knocking about the fridge.

I really like clean and zingy oriental foods for getting that healthy and trim feeling back.

Thai style soups that are clear and spicy with rice noodles and either chicken or prawns get my vote

Another nice dish is a chicken and water chestnut stir fry served stuffed inside cold lettuce leaves, really tasty and guilt free!

Soups in general I find to be really good for getting to the weight I like to be too. Slow roasted tomato or asian poached chicken are very tasty and have very little in the way of fat and calories.
