From Domestic Goddess (the book, not me)

Madeira Cake

240g softened unsalted butter
200g caster sugar (plus extra for sprinkling)
grated zest and juice of 1 lemon
3 large eggs
210g self raising flour
90g plain flour

For lemon/poppyseed variety:
about 2 tablespoons of poppy seeds and the juice of another lemon (recipe says 1/2 a lemon but I didn't want to waste half!)

450g loaf tin, buttered & lined

preheat oven to GM3
Cream butter & sugar and add lemon zest.
Add eggs one at a time together with 1 tablespoon of flour for each one.
Gently mix in the rest of the flour and add lemon juice (and poppyseeds if using)
Pour/scrape into tin
Sprinkle with sugar - she says 2 tablespoons but I think 1 heaped dessertspoon is enough)
Bake for about 1 hour or until cake tester comes out clean.
Remove to a wire rack and let cool in the tin before turning out.
