Anyone have a healthy chicken recipe?

I am losing weight and I got chicken breasts out of the freezer last night. But I'm not sure what to do with them really. I am quite skint so it needs to use basic store cupboard ingredients. I have lots of tinned tomatoes, spices, pasta and rice etc.

I don't do much cooking as DH is a good cook but I said I would do dinner tonight as he is working.

This may not help for today if you don't have the ingredients, but last night we tried this - chicken with harissa

It's just chicken breasts smeared with harissa paste, then baked in the oven with cherry tomatoes. It's REALLY good! It would also work with curry paste. We had it served with boiled potatoes and salad.

Quick and easy midweek chicken supper recipe, with just a little hint of spice

Serves 4

Preparation and cooking times
Prep 2 mins

Cook 15 mins

Low-fat

Heat oven to 200C/fan 180C/gas 6. Put the chicken into a medium roasting tray, then rub with the harissa, oil and oregano.
Cover with foil and roast for 5 mins, then remove the foil and add the cherry tomatoes and olives to the tray. Roast for 10 mins more until the tomato skins start to split and the chicken is cooked through. Serve with boiled new potatoes

184 kcalories, protein 34g, carbohydrate 2g, fat 4 g, saturated fat 1g, fibre 1g, salt 0.41 g
